Braised Red Cabbage Recipe from Mac


BRAISED RED CABBAGE

30 Servings

1 Medium head Red Cabbage
4 Tbsp. Butter, cut into pieces
1 Tbsp. Sugar
1 tsp. Salt
1/3 Cup each Water and White Vinegar
1/3 Cup Red Currant or Crabapple Jelly
3 Tbsp. Grated Apple

1) Grate cabbage finely, discarding any really coarse pieces. Put in large roasting pan. Bring water, vinegar, salt sugar and butter to a boil and pour over cabbage. Toss well. Cover tightly and braise for two hours in a 350° oven.
2) Ten minutes before it is done, add the jelly and grated apple and continue cooking (covered).
3) This recipe tastes better if made a day ahead of time. Better yet, make the whole thing ahead of time except for adding the jelly and apple, freeze it, and reheat it on the day needed. Add the jelly and apple when hot, and cook ten minutes.

Mac said in her Email she couldn't remember where she got this recipe from but being that the bottom of the attachment says KWH, I'm willing to bet that's probably where its from.
