3rd Course is going to be NUMMY!

Dinner last night was the third course of Storvik Novice Tourney Feast

The stuffed pork was wonderful. I'm not sure what all the stuffing was, but there was cheese, thyme and rosemary. It was very good although I didn't get nearly enough of it. Some of the filling had leaked out and everyone who got some of the extra was very happy.

My suggestion to LLT was that next time we should cut the pork, spread the filling, then roll it and tie it almost like a jelly roll. Since the Pork will probably be pre-baked and then heated on the grill the day of the event, we could actually cook it wrapped in foil which would preserve the filling a little bit better.

The Sparagus with Cream was something we've had before and can have again any night of the week. It's a very simple dish where the Asparagus is cooked, then heated with butter and cream. LLT had put thyme on the dish, but I need to make sure it gets mixed better because while everyone else said they had the right amount, I felt like there was way too much.

What can I say? The mushrooms were great. I don't know what she did besides cook them in butter with some minced onion, but I could eat these every day of the week.

Red Carrots with Brown butter & onion
I liked. The carrots could have been cooked a tad less since some of the small ones were starting to get mushy, but the big ones were perfect. There was a general feeling that there was too much butter in the dish, which I agree can get to be a problem when serving things on a feast level - don't want the carrots to be soaking in a pool of butter, but I didn't have a problem with the level of butter from last night

Potage of Rasberries
This was the one problem dish of the bunch. The problems will have to be worked out before the dish is served at feast but then we have something like 3 months to do it in. We need to figure out how we want to serve the dish. It's a custard which always makes things fun. The big problem is going to be figuring out how to give people enough without giving them too much. LLT forgot to strain before baking so we had
raspberry seeds. Not a problem for last night, but not something we want to do for the feast. The idea that LLT liked best (thank you sskipstress) was to serve the custard in hollowed out limes. Somehow I don't think this is the final solution but it's something to think about.

I forsee eating Potage of Rasberries at least a couple more times before the ultimate test feast.
