Pineapple pudding/baked pineapple
8 to 10 slices white bread
1/2 lb. butter
20 oz. can crushed pineapple, with juice
2 eggs, well beaten
2 tbsp. flour
1/2 cup sugar (I think the original recipe called for a lot more sugar than this. I tend to cut back on it back - have been known to make it with 1/4 cup)
Cut bread into cubes, brown in fry pan using butter. Mix all other ingredients in 1 quart casserole dish, add browned bread cubes. Bake at 350 degrees for 40 to 45 minutes in covered casserole dish. Excellent with ham!
